A fragrant Thai fruit tea for warm days and cool glasses
Dried bael fruit makes an aromatic amber drink with a character all its own. The broad cross-cut slices show the fruit’s segments and seeds, giving the packet a rustic look and making the ingredient easy to recognise.
Simmer the slices for a warming pot of Thai fruit tea, then sweeten it to taste. It is just as enjoyable after cooling: prepare it ahead, strain it well and pour it over plenty of ice for a refreshing drink.
How to prepare bael tea
Bring 1 litre of water to the boil and add 6 dried bael slices. Continue simmering until the water develops a deep colour and fragrant aroma. Turn off the heat, sweeten to taste if desired and stir until dissolved.
Strain the liquid before serving. Drink it warm straight from the pot, or allow it to cool before refrigerating or pouring over ice. For your next batch, adjust the number of slices or the simmering time to suit the strength you enjoy.
One ingredient, several kitchen possibilities
The bag contains only dried bael fruit. Alongside tea, the slices can add their fruit aroma to syrups, chilled drinks and desserts. Their generous size also makes them easy to remove when you want to prepare a clear infusion.
