A whole fruit with a distinctive sweetness
Monk fruit, also known as Luo Han Guo, is traditionally dried whole before being cracked open for drinks and cooking. The brittle shell holds a dark interior with a deep, fruit-led sweetness and an aroma unlike ordinary sugar.
Add a piece to hot water for a simple infusion, or simmer it alongside other ingredients in a broth or herbal drink. Because the flavour can be strong, begin with less than you think you need and adjust the next batch to suit your taste.
