Hot, iced or transformed with citrus
For a simple cup, place a small amount of the dried flowers in a teapot or heat-safe cup, add hot water and allow the colour to develop before straining. Serve it warm, or let it cool and pour it over ice.
A squeeze of lemon or lime shifts a butterfly pea infusion towards purple and adds a bright citrus edge. The same colourful liquid can be stirred into lemonade, sparkling water, rice dishes, jellies or desserts. Begin with a light infusion and deepen it gradually when a recipe needs a stronger colour.

Preparation
Add the desired amount of flowers to hot water, allow the colour and flavour to develop, then strain. Enjoy warm or chill before serving over ice.
Storage
Keep the bag tightly closed in a dry place at room temperature, away from direct sunlight and moisture. Do not refrigerate.
